Pork Shoulder (pork butt, picnic roast), 3 oz cooked and shredded
Egg, fresh, 1 extra large
Red Ripe Tomatoes, .05 cup, chopped
White Onions, raw, .05 cup, chopped
Serrano Peppers, 1 pepper or more to taste
Place in frying pan with salt to taste and warm precooked meat.
Once meat begins to soften, add eggs, tomatoes, onions and chile(s).
Stir consistently over med-low heat until eggs begin to scramble and harden.
Cook to desired consistency, serve.
May garnish with Crema Agria, fresh salsa and Cotija Cheese
