3 slices Italian bread (Tuscan unsalted), dried
2 cups Water (or sufficient to cover bread)
1/2 medium tomato, diced
1 small cucumber, peeled and diced
1/4 cup purple onion, diced
10 basil leaves, coarsly chopped
2 Tbs. olive oil
2 Tbs. Cider vinegar
1/2 tsp. Salt (or to taste)
1/8 tsp. Pepper (or to taste)
This is a traditional Tuscan summertime salad. Fresh and filling, a couple of servings can be a meal in itself.
