Healthy Chocolate Chips

Submitted by: KRAVMAGAGIRL

Introduction

The powdered milk makes these more like milk chocolate chips. Use less or perhaps you could omit it if you wanted semisweet. The powdered milk makes these more like milk chocolate chips. Use less or perhaps you could omit it if you wanted semisweet.
Number of Servings: 1

Ingredients

    2 ounces unsweetened chocolate (Ghirardelli)
    2 tablespoons powdered nonfat milk
2 tablespoons xylitol (opt. - I leave out)
1/8-1/4 teaspoon good-tasting pure stevia extract
    2 teaspoons coconut oil

Directions

Chop chocolate bar and add coconut oil. Melt chocolate and oil together over a double boiler. Add in powdered milk and fold chocolate around the bowl with a spatula until you get a uniform, smooth consistency. Stir in stevia, taste, and add more if necessary. Pour mixture into a pan lined with parchment paper. Smooth out the chocolate to a uniform thickness, about 1/4". Chill in freezer or fridge until firm. Remove chocolate from fridge. Let sit for a couple of minutes until it cuts smoothly. Chop into chunks.

Makes about 1/2 heaping cup. (Nutrition info is for entire recipe)
