No-Bake Low Carb Lemon Cheesecake



Introduction

A delicious way to enjoy dessert without blowing your carb allowance. A delicious way to enjoy dessert without blowing your carb allowance.
Number of Servings: 10

Ingredients

    1/4 cup Boiling Water
    1 small box (3oz) lemon sugar free Jell-o
    16 oz (2 8-oz packages) Philly Cream Cheese
    1/2 cup sour cream
    1/4 cup heavy cream
    Additional 1 cup heavy cream
    Additional 1/4 cup Splenda
    Note: The additional 1 cup heavy cream and 1/4 cup Splenda is Not calculated into this recipe. This is optional!

Directions

*In small bowl , mix lemon sugar free gelatin with 1/4 cup boiling water until fully dissolved.

*Set aside.

*In a separate large bowl, blend (2) 8-oz. packages of softened cream cheese with the 1/2 cup Splenda, 1/2 cup sour cream and 1/4 cup heavy whipping cream. Beat until very smooth.

*Add gelatin mixture and beat again until thoroughly mixed and smooth.

*Pour into 9 inch pie plate sprayed lightly with Pam. Refrigerate 2-3 hours.

*Optional: Whip additional 1 cup of heavy cream with 1/4 cup Splenda and billow over cheesecake. Also you may sprinkle a bit of chopped walnuts or almonds. This will add additional carbs. Please adjust your carb count accordingly.

Note: I've tried every sugar free flavored gelatin out there and they all work well with this recipe. I like to sprinkle the nuts on the bottom for a lovely crust.
