Well look no further, this is it! It does take some time to cook, but make it on a cold rainy Sunday and your family will be thanking you all night!
Number of Servings: 8

Ingredients

    1 tbsp butter
    1 tbsp olive oil
    24 oz. chicken breast, diced
    1 small onion, diced
    1 c. carrots, sliced
    3 celery stalks, sliced
    3 cloves of garlic
    Salt & Pepper to taste
    1 tbsp. cream sherry
    6 c. homemade chicken stock or 3 cans chicken broth
    2 tbsp cornstarch

    Dumplings
    1 1/4c. all-purpose flour
    1 tsp baking soda
    1/2 tsp salt
    Freshly ground pepper
    3 tbsp cold butter, cut into cubes
    1/2 c. buttermilk
    2 tbsp. chopped parsley

Directions

1. Put butter and olive oil into dutch oven over medium-high heat.
2. Once butter is melted add chicken pieces
and cook until nicely browned.
3. Add onion, carrots, celery, & garlic to pot and saute 5 min.
4. Add salt and pepper and sherry and cook 1 minute. Meanwhile add a little stock and the cornstarch to a small bowl and mix well.
5. Add cornstarch mixture and the rest of the chicken stock to veggies & chicken, scraping the bottom to get all the browned bits up. Bring soup to a boil then cover and lower heat to medium-low. Cook covered for 45 minutes.
6. Meanwhile, make the dumplings by sifting flour, soda, salt, & pepper into a medium bowl. Using two butter knives or a pastry cutter, cut in butter with the flour, should resemble fine cornmeal once thoroughly mixed. Stir in butter milk and parsley.
7. Using a tablespoon scoop out a dumplings and drop them into soup. Cover and cook another 10-15 minutes until the dumplings are cooked through. If you prefer the crispy dumplings turn on your broiler and after10 minutes of cooking covered on the stove place the pot under the broiler and brown for a few minutes... KEEPING A VERY CAREFUL EYE ON THE FOOD. Don't let the dumplings burn.
