Herb-Seasoned Chicken Breasts

Ingredients

    4 boneless, skinless chicken breasts (1 lb.)
    1 tsp Italian seasoning
    1/2 tsp garlic-pepper blend
    1/2 tsp paprika
    1/4 tsp salt
    1/4 cup chicken broth
    1 pkg (8 oz) sliced fresh mushrooms (3 cups)

Directions

Sprinkle both sides of chicken with Italian seasoning, garlic-pepper blend, salt & paprika.
Heat 10-in nonstick skillet over medium heat. Add chicken; cook 3 minutes. Turn chicken; reduce heat to medium-low. Stir in broth and mushrooms.
Cover; cook 4 to 7 minutes or until chicken is no longer pink when center of thickest part is cut (170F).

    Works well in a crockpot too - for those busy days when you need to have something ready and waiting at home when you get off of work.

    Sounds great, will try it next time. Another quick trick-use 2-4 chicken breasts , put in microwave container, use 1 T Italian salad dressing and 1 T lemon juice for each breast, cover, and cook on high for 8-10 minutes, depending on microwave. Great hot or cool off and use in salad. - 4/26/09

    Substuting low or no sodium chicken broth lowers the sodium content drastically! Remember this..........when you substitute something, such as dressing for the seasoning, or add something, like parmesean cheese, the fat, calorie, sodium, and carb content changes drastically as well.;-) - 6/25/09

    The calorie count is off on this one, 1/2 chicken breast is certainly not this many calories. I think they are counting for one full chicken breast, too much for me to eat. - 4/24/10

    I am trying this recipe tonight. I will used my own chicken broth instead of store bought. I get broth when I boil chicken that is being used in another recipe. It should be healthier without all the extras. - 4/23/10

    We made this tonight. the chicken was moist and the flavor was good. I think a little bit of olive oil or margarine would give it something it lacked. We doubled the mushrooms and broth, and served the mushrooms and juice over noodles cooked with peas. YUM - 8/14/08

    I am looking forward to trying this recipe...looks simple and delicious. One word of caution to LTaylor...Pork IS red meat, I used to work for a group of Cardiologists that were furious with the adds...it may turn white in color but it is nutritionally a red meat! Sorry!

  • This was EXCELLENT! I used Mrs. Dash Garlic-Herb seasoning and then added my own black pepper. I had to use canned mushrooms (YIKES) and layered baby spinach across the top and covered with a dome lid till spinach was wilted. SOOO GOOD! - 3/20/11
