Light Spaghetti Sauce

This is a very light and easy tomato sauce for spaghetti that tastes unbelievable! I have written out the directions exactly as my friend's mother gave them to me. If you are trying to cut down on sodium, use low salt juice. Campbell's brand juice thickens best and has a richer flavor than store brands but if you can't find large cans of Campbells they will work but will probably need some tomato paste to thicken a bit. Ingredients

2 large (48 oz) cans of Campbells Tomato Juice
1 onion chopped finely
3 cloves (or to taste) garlic minced
1 tsp oil
salt, pepper to taste
1 bay leaf
oregano, chili powder, italian seasoning to taste
dash of nutmeg
tomato paste (optional and nutrition not calculated)
Directions
In oil brown garlic and onion until translucent. Add tomato juice and let it start cooking on low heat. Add salt (if needed), pepper and bay leaf. Cook at low to medium heat. As sauce thickens you can add a little sugar to lessen the acidity. As it is cooking add oregano, chili powder and italian seasoning. Towards the end add a dash of nutmeg. Sauce should start thickening a little. If it doesn't you can add some tomato paste. Taste until done. Remember, add spices a little at a time because you can always add more but can't take it away.
