Introduction

Very easy to make and tastes yummy! High in protein, potassium and vitamins A and C for about 500 calories per large serving!

Serve with a baked sweet potato for an almost-Thanksgiving meal!

Number of Servings: 4

Ingredients

    About 3/4 pound skinless, boneless chicken breast, diced into bite sized pieces
    1 10.5 oz. can of cream of chicken soup
    8 tablespoons of fat-free sour cream
    1 10 oz. bag of frozen peas and carrots
    1 10 oz. bag of frozen broccoli florets
    1 box of stuffing mix

Directions

* Preheat oven to 400 deg. F.
* Prepare the stuffing according to the package directions, but use only about 2/3 the recommend water. Mix it together in a large pot.
* Mix together the chicken, soup, sour cream and vegetables in a non-stick sprayed 9x13 pan.
* Top with the stuffing mix.
* Bake about 30 minutes or until the stuffing is golden brown and slightly crispy and the chicken and veggies and bubbling in the soup mix.
