Introduction

This is the recipe from the back of the Stove Top box. You could really cut the fat and sodium by omitting the butter or spread in the stuffing mix and also using lower sodium and fat canned soup. Number of Servings: 6

Ingredients

    1 box Stove Top stuffing mix for chicken
    2 tbsp Earth Balance buttery spread (or butter/margarine)
    1.5 lb boneless skinless chicken breast, cut into pieces
    1 can cream of mushroom (or chicken) soup
    1/3 cup sour cream (I use reduced fat)
    1 bag (16oz) forzen mixed vegetables, thawed and drained

Directions

Heat oven to 400.
Cook stuffing according to directions and set aside.
Mix chicken, soup, sour cream, and vegetables together and spread in a 9x13 baking dish.
Top with stuffing.
Bake 30 minutes, or until chicken is cooked through.
Makes 6 servings.
