Greek Rice

Introduction

Number of Servings: 4

Ingredients

    1 cup long grain brown rice (uncooked)
    1 3.75 oz can diced tomatoes (with liquid)
    1/4 cup lemon juice
    1/4 cup vinegar
    1 tbsp soy sauce

Directions

Drain tomatoes and reserve liquid in a 2 cup measuring cup.; Add lemon juice, vinegar and soy sauce; Add enough water to make 2 cups of liquid.
In a medium sauce pan, bring liquid to a boil; Add brown rice and tomatoes.
Turn down to medium heat and simmer until rice is cooked (30 to 40 minutes).
Makes 4-1/2 cup servings
