Mom's Mackerel Cakes.

From memory of how Mom used to make these, using either Mackerel or Salmon. Of course, there wasn't any Ms Dash back then- use 1/4 tsp. Pepper, 1/2 tsp. Salt. My revisions for a healthier choice. Ingredients
-
1 15 oz. Can, Mackerel- skin and bones removed and drained.
2 Egg Whites or Egg Beater's may be used; allowing for Caloric and Carb difference.
1/4 C. Whole Wheat Flour.
1 tsp. Ms Dash, flavor of choice. I used the Garlic/Herb.
1/4 C. Finely minced Onion.
1/4 C. Lemon Juice.
Directions
Mix all ingredients together until well blended. I prefer to remove the bone and skin from the Fish prior to using.
Form into 6 Patties. Spray skillet or Table Top Grill with either Cooking Oil or PAM to prevent sticking. Cook each side until Golden. Mincing the Onion finely, should help to prevent too much 'crumbling', they will firm up on cooling to somewhat.
