Pasta di Pollo di Verdura

Number of Servings: 6

Ingredients

    1/2 lb boneless skinless chicken breast
    1 medium zucchini (sliced)
    1 medium yellow squash (sliced)
    1/2 white onion (sliced)
    1 red bell pepper (sliced)
    1 yellow bell pepper (sliced)
    2 tbsp olive oil
    2 cloves garlic (crushed)
    1 tsp salt
    1 tsp black pepper
    4 servings bowtie pasta
    1 cup tomato & basil spaghetti sauce

Directions

Cook pasta according to directions, drain and place to side.

Heat olive oil, garlic, pepper, and salt in large frying or stir fry pan. Add chicken and stir fry until cooked thoroughly. Do not drain.

Turn heat to medium-low, add vegetables. Stir until well mixed, then cover. Let cook for 15 minutes, stirring occasionally.

Drain mixture and return to stove. Add spaghetti sauce and pasta. Stir, cover, and let cook for additional 5 minutes.

Serves 6
