Introduction

Sloppy Joes with beef and chicken, plus a good helping of veggies. Serve on a whole wheat bun.

(I'm not 100% sure of the measurements, since I just threw a bunch of stuff in a pot, so taste as you go, and let me know if you make changes.)

Ingredients

    3/4 lb. Ground beef, lean
    1 lb. Chicken Breast, ground
    14.5 oz. can Petite Cut Diced Tomatoes - Garlic & Olive Oil
    1/2 c. Hunt's Ketchup
    1/2 c. Peppers, sweet, red, fresh, diced finely
    1/2 c. Carrots, raw, diced very finely
    1 c. Onions, raw, diced finely
    1 T. Yellow Mustard
    2 T. Worchestershire Sauce
    1 T. vinegar

Directions

Add very finely diced veggies, beef, and chicken to a Dutch oven. Brown beef, seasoning meat as desired. Drain grease off. Add remaining ingredients. Simmer at least 30 minutes, stirring occasionally. The longer the meat simmers, the better it will taste, and the thicker the meat mixture will get. I usually simmer for two hours.
Makes 10 approximately 1/2-cup servings.
