Cheeseburger Soup

Number of Servings: 8

Ingredients

    1 lb ground turkey
    1 cup celery, chopped
    3/4 cup carrot, shredded
    2 onions, chopped
    1 tsp basil
    1 tsp thyme
    3 cups chicken broth
    1/4 cup flour
    3 tbsp butter
    8 oz velveeta light, cubed
    1/2 cup sour cream

Directions

Brown meat. Once its no longer pink, add celery, onion, carrots, basil, thyme and sautee until veggies are soft. Add chicken broth and bring to a boil. In a small skillet, melt butter and flour together and stir until brown. Add to the soup, stirring until mixed thoroughly. Add velveeta and stir until melted. Before serving add sour cream and blend well.
