0.5 cup dry Quinoa
2 tsp Olive oil
3 medium Tomatoes
1 cup Asparagus
1 cup Broccoli
Slice tomatoes, asparagus and broccoli. Add tomatoes, and olive oil to saute pan with lid. Cook on low until juice starts to leave tomatoes (usually about 5 minutes). Add asparagus and broccoli to pan and immediately replace lid. Turn heat to medium low and let mixture cook for 15-20 minutes without removing lid. If liquid starts to cook off add .25 cup water.
Season to taste and serve over Quinoa.
