Crustless Veggie Ham Cheddar Quiche

Ingredients

18 whole eggs (or egg substitute)
1/4 cup fat free ricotta cheese
1/4 cup lowfat shredded cheddar cheese
chopped onions & peppers (@1/2 cup combined)
chopped tomatoes (@ 3/4 cup or more to taste)
10 thin slices lowfat, low sodium deli ham, chopped
salt & pepper to taste
Olive Oil cooking spray
Directions
Saute chopped onions & peppers with olive oil cooking spray until slightly browned (this gives more flavor to the veggies). Spray a casserole dish with olive oil cooking spray & add cooked veggies, chopped tomatoes, ham & cheddar to the casserole dish. Beat eggs + ricotta until well blended, add salt & pepper, and pour into casserole dish. Bake uncovered for 35-45 minutes, or until middle is firm and top is lightly browned. Cut into 8 slices.
