Fried Rice

Introduction

This is a dish I learned to make many years ago. It's great to use up leftover roast beef or roast pork. This is a dish I learned to make many years ago. It's great to use up leftover roast beef or roast pork.
Number of Servings: 6

Ingredients

    1 cup raw brown rice
    1 tablespoon olive oil
    1 cup chopped onion
    1.5 chopped celery
    1 cup chopped leftover beef roast
    2 cups (one can) Swanson's low sodium Beef Broth
    1 tablespoon worchestershire sauce

Directions

Place olive oil into a large saucepan. Add rice and stir until rice is browned and toasty. CAREFULLY add remaining ingredients, leaving the liquid until last. Stir to combine ingredients. Bring liquid to a boil and reduce heat to simmer. Cover the pan and cook according to directions for cooking brown rich. Makes 6 servings of 189 calories or 4 large servings of 284 calories each.
