Chicken Tortilla Soup

Introduction

Ingredients

    Chicken Breast, no skin, 0.5 breast, bone and skin removed
    *Better Than Bouillon - Chicken, reduced sodium, 1 tsp
    Carrots, raw, 1 cup, chopped
    Onions, raw, .5 cup, chopped
    Celery, raw, 1 cup, diced
    Don Panco White Corn Tortilla-approx 6 in. (2 tortillas = 1 serving) size, 2 serving
    Yellow Sweet Corn, Frozen, 0.5 cup kernels
    1/2 tsp cumin
    2 T chopped cilantro

Directions

Start by simmering chicken breast in enough water to cover for 20 minutes, or until done. Take out of water, reserving any water that is left. Cool chicken until you can handle it, and shred with a fork or chop.
While chicken is simmering, chop vegetables and set aside.
Cut tortillas into very small pieces. They will be used to flavor and thicken the soup.

When chicken is ready, put back into the pot, along with 1 tsp Better than Bouillon reduced sodium chicken base, prepared in 1 c boiling water. Bring to low boil, reduce heat to simmer and add all chopped vegetables and corn. Add tortilla pieces and spices.

Stir occasionally, cooking at least 45 minutes. Add water if necessary. Tortillas will not totally dissolve, but should get very soft and add some texture to soup. Be sure to stir well before serving to avoid all tortilla pieces sinking to bottom.

Serve with broken tortilla chips and guacamole garnish, not included in nutritional info.
