Clean Mac n Cheese

Ingredients

    2 1/4 cup whole wheat pasta, like elbow or penne
    1/4 cup whole wheat flour
    1/4 tsp sea salt
    1 cup skim milk
    3 oz lowfat swiss cheese
    5 oz lowfat cheddar cheese
    1/2 cup panko breadcrumbs
    4 tbsp parmesan cheese

Directions

Cook pasta according to directions.

Preheat oven to 375*. Lightly mist a 1 1/2 qt baking dish with cooking spray.

Mix flour and salt in medium bowl. Slowly whisk in enough milk to form a paste. Then whisk in remaining milk, making sure there are no lumps.

Place a medium nonstick sauce pan over medium heat and add milk mixture. When milk is warm, add swiss cheese and stir frequently with wooden spoon until cheese is melted. Add cheddar cheese and continue stirring until cheese is melted and mixture starts to thicken.

Stir in cooked pasta until well mixed. Pour into dish.

In small bowl, stir together breadcrumbs and parmesan cheese. Sprinkly over pasta. Bake 15-20 minutes until topping is lightly browned. Let sit 5 minutes before serving.

Makes six 1-cup servings.
