Chewy Granola Bars

Introduction

A great recipe I got from a friend. These have peanut butter and honey, but you could use almond butter and maple syrup instead. I sometimes use raw sunflower seeds instead of roasted. Play with the dried fruits and nuts to get the combination you like best. A great recipe I got from a friend. Ingredients

    1/2c Brown Sugar
    2/3c Smucker's Natural Creamy Peanut Butter
    3/4c Honey
    2 tsp Vanilla Extract
    2.5 c Quaker Oats 100% Natural Whole Grain oatmeal(
    1 c King Arthur 100% Unbleached White Whole Wheat Flour
    1/4 c Bob's Red Mill Whole Ground Flaxseed Meal
    1/2 c Sunflower Seeds, roasted, unsalted
    1/2 c Sun Maid Golden Raisins, or other dried fruit
    1/2 c unsweetened coconut
    1 cup, or less, chocolate or carob chips (I used dark chocolate chunks)

Directions

Heat oven to 350. Grease 9x13 pan.
Mix together brown sugar, peanut butter, honey, and vanilla. Add 2 tbsp hot water (optional, to help with gooeyness) and stir until well mixed.
Mix together remaining ingredients in another bowl, then stir into wet until well combined. Press into prepared pan and bake 15-20 minutes until lightly browned.
Cool slightly and then cut into 16 servings (about 2x3 inches each) while still warm. Cool completely and wrap. Store in fridge, or freeze for later.
