Chicken & Rice Casserole

Ingredients

    2 cups cooked brown rice
    2 cups (8 oz.) shredded Monterey Jack Cheese
    1-1/2 cups cooked, chopped chicken breast
    1can (12 fl. oz.) Nonfat Evaporated milk
    1/2 cup finely chopped red onion
    1 large eggs, slightly beaten
    1/4 cup finely chopped cilantro
    2 tbsp. reduced fat margarine, melted

Directions

Preheat oven to 350 degrees. Grease 2-quart casserole dish. Combine ingredients well in dish. Bake 45-50 minutes or until knife inserted in center comes out clean.
