Chicken Tortilla Soup

Number of Servings: 6

Ingredients

    Chicken Breast, no skin, 9 ounces (or leftover cooked chicken breast)
    Olive OIl, 3 T
    Beans, black, 1 can-drained and rinsed well
    Yellow Sweet Corn, Frozen, 0.5 cup kernels
    Ground Cumin, 1 tsp
    Organic Chicken Broth Low-Fat, 4 cup
    Rotel Diced Tomatoes & Green Chilies-1 can
    Onions, raw, .25 cup, chopped
    Garlic, 2 cloves
    Pepper, black, 4 dash
    Tortilla Chips, 3 oz
    Cheddar Cheese, .75 cup, shredded
    Cilantro, fresh (optional)-3 T

Directions

Heat olive oil in large sauce pan over medium heat, add chicken breast, lightly pepper the chicken as it cooks. Mince onions and garlic while the chicken cooks.

When chicken is lightly browned and cooked through, remove it from the pan (retaining the oil in the pan). Add the onions and garlic to the pan and saute to translucent.

Cut chicken into bite size pieces and add back to pan. Add all remaining ingredients except the chips, cheese and cilantro.

Let simmer for 15 minutes (or as long as you like).

To serve, ladel soup into a bowl, lightly crunch about 1/2 oz of tortilla chips on top, add about 1/8 cup of cheese to the top and microwave or broil just long enough to melt the cheese. Sprinkle with fresh cilantro if desired.

This recipe makes about 6 servings.

**Resist salting the chicken (or adding any salt at all) - the canned tomatoes, the chips and the cheese add plenty.
