Eastern NC Fish Stew

Introduction

This recipe has been handed down in my family for generations. It is even better the next day, if there's any left. This recipe has been handed down in my family for generations. It is even better the next day, if there's any left.
Number of Servings: 10

Ingredients

    4 white fish fillets cut into thirds
    4 large white potatoes peeled and sliced
    4 large onions peeled and sliced
    10 large eggs
    4 slices bacon chopped
    1 can tomato soup
    water
    salt and pepper
    red pepper flakes

Directions

Render bacon in dutch oven and pour off grease. Layer fish, onions and potatoes twice. Add salt and pepper and red pepper flakes and pour can of tomato soup over all. Add just enough water to cover, bring to a boil, then turn down to simmer, cover. Do not stir. When potatoes are tender, break eggs into stew one at a time around the top. Do not stir. When eggs test firm with a toothpick, it's done. Serve with cole slaw and plenty of bread to soak up the juices. Makes 10 1 1/2 cup servings.
