Pure & Creamy Pumpkin Soup

Introduction

No Broth, a FULL DAY'S Vitamin A, High protein (keeps you full!) and pure vegetable goodness. Not to mention if you have cooked pumpkin on hand, it is sooo fast to make! Ingredients

    Pumpkin, cooked, 1.5 cup, mashed (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    *Stoneyfield Farm Organic lowfat plain yogurt, 1.5 cup (remove)
    *pepitas, 0.125 cup (remove)
    *allspice 1 tsp, 1 serving (remove)

Directions

Toast the pepitas until they start to pop (2 tbsp) and add a tsp of allspice. Set aside. Heat up a medium onion until soft & brown, add the cooked pumpkin (you can use canned or cook up your own pumpkin, I prefer fresh). Use a blender or food processor (I used an immersion blender) to puree and mix with the yogurt.

Top with the seeds and serve!
