Number of Servings: 4

Ingredients

    1 c onion, thinly sliced
    1/4 t. ground cinnamon
    1/4 t. ground ginger
    1/4 t. ground cumin
    1/4 t. paprika
    1/4 t. cayenne
    1 T olive oil
    2c sweet potato, peeled and cubed (or yams)
    1 c, chicken broth (low sodium)
    1/2 cup diced tomato, (blanched & peeled)
    1 T honey
    Juice of 1/2 a lemon
    1 red bell pepper, cubed
    2/3 cup zucchini, cubed
    2 T chopped fresh mint
    2 T. chopped fresh cilantro (can substitute flat leaf parsley)
    1/4 c lowfat feta, crumbled

Directions

Satue onion and spices in oil in a large non-stick skillet over medium high heat until onion softeness, about 5 minutes.Add sweet potatoes, broth, tomatoes, honey, and lemon juice. Cover and simmer 10 minutes; remove lid and cook another 5 minutes, or until potatoes are tender and liquid turns syrupy.Stir in bell pepper and zucchini; cover and simmer until pepper and zucchini are crisp-tender, about 4 minutes.Remove from heat, add herbs. Garnish each serving with crumbled feta.

Serve with steamed whole wheat cous cous or whole wheat toasted pita bread (optional)

Yield: 4 1 Cups servings
