Lemon Chicken

Number of Servings: 6

Ingredients

    27 oz raw boneless, skinless chicken breasts (6 pieces)
    4 cloves garlic, minced
    3 oz Baked Ruffles, ground up in food processor until crumbs
    juice of 2 lemons
    zest of 2 lemons, finely minced
    1 T olive oil
    To Taste: Onion powder, paprika, garlic powder, Italian herbs

Directions

Preheat oven to 350 degrees.

Combine lemon juice, garlic, and olive oil in a bowl. Combine Ruffles crumbs, lemon zest, and spices/herbs in another bowl.

Dip chicken into oil mixtures and then pat into crumbs until lightly coated. Place into a 9 x 13 baking dish sprayed with Pam. Drizzle any remaining oil over the top of the chicken.

Bake for 25 to 30 minutes or until juices run clear.
