Pepperidge Farm Beefy Vegetable Skillet

Introduction

This is the recipe on the back of the herbed stuffing bag. I add 2 cans of diced tomatoes with their juices. I also used more beef in this recipe, just what I had on hand already.
If I don't have seasoned tomatoes I just add some Spike.
This made 6 servings, a little more than 1.5 cups each.

Ingredients

    1.5 lbs lean ground beef
    1 medium onion, chopped
    2 medium zucchini, diced
    2 cans diced tomatoes with basil, garlic, and oregano
    2.67 cups cubed herb stuffing mix
    2 tbsp shredded parmesan cheese

Directions

Brown beef and onions in large skillet until well cooked. Drain fat if necessary. Add zucchini and tomatoes and bring to boil. Reduce heat to low, cover and cook 5 minutes, until zucchini is tender. Stir in stuffing mix and parm. cheese. Remove from heat, cover, and let sit 5 minutes. Fluff and serve, with extra cheese if desired. Makes 6 servings (10 cups total, so a little more than 1.5 cups per serving).
