Easy Cheesy Burger PIe

Number of Servings: 8

Ingredients

    1 lb 85/15 ground beef
    1 medium onion, minced
    4 oz shredded pepper jack cheese
    1 c 1% milk
    1/2 c Original Bisquick mix
    2 tsp parmesan cheese (optional)
    2 tsp Chef Meg's salt-free taco seasoning (on the SP site)

Directions

Heat oven to 400. Spray 9" glass pie dish with cooking spray. Brown ground beef. Add onion when beef is almost done. Add taco seasoning. In a small bowl, combine Bisquick, milk, and eggs and stir or whisk until blended. Drain beef mixture and spread into pie dish. Top with cheese. Add liquid mixture to top. Sprinkle parmesan cheese over the top. Bake at 400 for 25 minutes, or until "crust" is toasty and not liquid-y. :-)

Makes 8 servings when sliced like a pie. (Parmesan cheese is included in calorie content.)
