Crockpot Green Chili Stew

Introduction

This is great during the winter months and wonderful with whole wheat rolls.

Number of Servings: 8

Ingredients

    1 lb pork
    4 tbsp low sodium chicken bouillon
    1 can corn (low sodium)
    2 medium potatoes
    2 tomatoes (or 1 can)
    2-3 cans green chilies
    1 tsp oregano
    1 tsp salt
    4 cups water

Directions

Place all ingredients into crockpot and cook on low for 5-6 hours. About a half hour to an hour before serving, break apart meat with a fork (it should be tender enough to just fall apart). Serve.

I accidentally put jalapinos in this recipe once and a lot of people liked it. I am not a big heat fan but others might really like it.
