1 head of cabbage, chopped
4 carrots, chopped
1 red onion, medium - thinly sliced
2 granny smith apples, thinly sliced
1 cup pecans, toasted and chopped
1 tbsp dijon mustard
1 tsp sugar
1 tsp cayenne
3/4 cup mayonnaise, light
1 lemon, juiced
salt & pepper to taste
Combine the remaining ingredients and whisk until smooth.
Mix together and chill. Serve.
