Introduction

Number of Servings: 6

Ingredients

    1 1/4 lbs boneless skinless chicken breasts, cut into small strips
    1 Tbsp grapeseed oil
    1 medium onion, chopped
    1 (8 oz) can mushroom pieces
    1 (3 oz) pkg real bacon bits
    1 1/2 C low sodium chicken broth
    2 tsp minced garlic
    1/2 tsp sea salt
    1/4 tsp paprika
    fresh ground black pepper to taste
    1 C fat free or low fat Greek yogurt (nutrition info calculated using fat free)
    2 Tbsp whole wheat flour

Directions

Heat grapeseed oil in a large skillet until hot. Add chicken and onion; cook until the chicken is no longer pink. Add broth, mushrooms, garlic, salt, paprika, pepper, and bacon bits. Cover and simmer for 15-20 minutes. Combine the flour and yogurt until smooth; add to the skillet. Bring to a boil; cook at least 2 minutes or until thickened (note: if using fat free yogurt, sauce will not get as thick, but will still work). Serve over whole wheat noodles or brown rice (Not included in nutrition data for this recipe). Sprinkle with paprika if desired.
