Shipwreck Casserole

Introduction

An old-fashioned casserole which is still one of our favorites. An old-fashioned casserole which is still one of our favorites.
Number of Servings: 4

Ingredients

    1 cup chopped onions
    2 medium potatoes, sliced
    1 pound (500 gm) ground beef, lean
    1/4 cup brown rice - precook
    1 cup chopped celery
    1 cup diced carrots
    salt & pepper
    paprika
    1 can tomato soup

Directions

Cook the rice separately, set aside.
Brown the ground beef, drain any fat, set aside.
Grease a 2-quart casserole.
Add a layer of onions - each layer should cover the casserole, add more if needed.
Sprinkle each layer with salt, pepper and paprika.
Add a layer of celery, then carrots, then the potatoes.
Add cooked rice.
Top with the ground beef then pour on tomato soup to cover. Add 1/2 cup boiling water to soup can to rinse out and pour over casserole.
Cover and bake at 375 for 90 minutes or until vegetables tender.
