HCG Caribbean Lettuce Wraps

Introduction

Slightly spicy lettuce wraps that fit the HCG phase 1 diet plan. Slightly spicy lettuce wraps that fit the HCG phase 1 diet plan.
Number of Servings: 4

Ingredients

    1- Chicken Breast, bone and skin removed
    1/8 cup - Lime Juice
    1 tsp - Ginger Root, 1 tsp
    2 tsp. Orange Zest
    1- Scallions chopped
    1/2 -can Water Chestnuts chopped
    4 cloves - Garlic, chopped
    1 Tbls. Oregano
    1 Tbls. Cumin
    1 1/2 Tsp. Salt
    1/2 Tsp. Pepper course ground
    1/2 Tsp. Hot Pepper Sauce, or Jamaican Jerk Sauce
    1/4 Tsp. Red Pepper flakes
    1 Tsp. - Allspice
    2 Stalks - Celery chopped
    1/4 cup - Orange Juice
    1- Head Iceberg Lettuce

Directions

Wash Chicken breast and pat dry. Rub with a portion of oregano and salt and pepper. Broil or grill chicken breast with out any oil. When browned both sides transfer to oven and finish cooking, aprox 15 minutes at 350 F.
Cube Chicken and chop finely with hand chopper or food processor. Place chopped chicken in medium sauce pan, with orange juice, lime juice, scallions and cook on medium for 5 minutes. Add remaining ingredients and simmer for 20 minutes or until juices are reduced to a dry loose mixture.
Place filling in serving bowl.
Clean lettuce and peel into full leaf sections and place on serving tray.
At the table place chicken mixture in trimmed lettuce leaf sections, roll lettuce and eat. Aprox. 4 servings.
