Herb Roasted Potatoes ~ For 2

Introduction

Number of Servings: 2

Ingredients

    *Potato, raw, 2 small (1-3/4" to 2-1/2" dia.)
    Cooking onion 1/2 cup, sliced
    Basil, .5 tbsp
    Rosemary, 1 tbsp or dry 1 tsp
    *Canola Oil, 1/4cup
    Salt, 1 dash
    Pepper, black, 1 dash

Directions

Preheat oven to 425º F (220º C)
Peel potatoes, cut them in quarters, place the potato pieces in a large bowl of water covering the potatoes.

Drain, the potatoes, pat dry with paper towel. Rub olive oil all over the potato pieces and onion slices. Sprinlke the basil, rosemary,salt and pepper over the potatoes.

Roast in a 400 degree oven for 15 minutes. Lower temperture to 375 degree and continue for roast for another 15 minutes.
