Flax Pancake (Gluten-Free, Grain-Free, high protein, low carb)



Introduction

Made with eggs and ground flax seeds, this delicious pancake is great served with yogurt, pure maple syrup, or peanut butter! Made with eggs and ground flax seeds, this delicious pancake is great served with yogurt, pure maple syrup, or peanut butter!
Number of Servings: 1

Ingredients

    2 egg whites (or 1 egg)
    1 tbsp plain yogurt
    a few drops stevia
    1/4 tsp vanilla
    2 tbsp flax meal (ground flax seeds)
    1/3 apple, very finely minced (you can also use roughly mashed bananas or blueberries, or other fruit)
    sprinkle of cinnamon and/or other spices, as desired

Directions

Beat egg with yogurt, stevia, and vanilla until well mixed and fluffy. Add in flax meal, apple or fruit, and desired spices; stir until mixed. Let sit for 2-3 minutes while you preheat a nonstick skillet with a bit of coconut oil or cooking spray.

Pour batter into bottom of small skillet and cook a few minutes on each side, until nicely browned.

Serve spread with natural peanut butter (my personal favorite), or some yogurt and fruit together, or you could use some pure maple syrup (which, in my opinion, is way overrated compared to the PB!)

    wonderful low carb breakfast or snack, I made it with apples but I am going to have to try it with blueberries. I added a bit of cinnamon and a little baking soda to the ground flax, and now the kids love them too! - 3/30/12
