Italian Soup (add your own meatballs or meat)

Introduction

This soup goes great with my turkey/pork italian meatballs. (This is just the soup...so you can add any meat you choose... the meatball recipe is available as well, but sometimes you will want to just add leftover chicken, turkey, or beef.) Ingredients

    Ingredients:
    *Beef Stock-Swanson 33% less Sodium, 3 cup
    water 2 or 3 cups
    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Olive Oil, 1 tbsp
    *2 tsp Italian Seasoning, 2 serving
    *Lawry's seasoned salt, 0.25 tsp
    Barilla Plus Rotini (2 oz, 56 grams), 3 oz
    *Westpac French Cut Green Beans, frozen, 2 cup
    *Crushed red pepper, 0.25 tsp
    Garlic, .25 tsp
    Basil (2Tbsp fresh, or 1Tbsp dry).

Directions

1. Chop your veggies.
2. Heat Olive oil in soup pan and saute/sweat your carrots, onions and celery.
3. Add broth and 2 or more cups of water depending on how thin you like the soup.
4. Add your spices.
5. Bring to a boil, add rotini.
6. Cook 7 or 8 minutes.
7, Add frozen green beans when the noodles are 95% done.
8. If you were adding meat, saute with step 2 above. If adding meatballs, these are cooking while you get the soup going.
