IntroductionDelicious, light and flavorful. Delicious, light and flavorful.
2 large, (preferrably vine ripened) tomatoes
1 tsp dried basil or 1 Tbsp fresh basil, finely chopped
1 Tbsp extra virgin olive oil
1/8 c. gorgonzola or blue cheese, crumbled
Place tomatoes in a serving dish. Drizzle with olive oil. Sprinkle with basil and gorgonzola.
Finely shaved pancetta or crumbled bacon can be added. Please note, these calories have not been calculated.
Each serving is approximately one very full half cup of tomato, about 1 tsp. of crumbled cheese,
1/4 tbsp olive oil and a 1/4 tsp. dried basil.
