Easy Shepherd's Pie

This easy recipe uses instant mashed potatoes to cut prep time and headache, but isn't high in sodium thanks to the other ingredients being reduced sodium or sodium free! Ingredients

    1 lb ground chuck
    1/2 medium onion, diced
    1 cup frozen peas and carrots, thawed
    3/4 cup frozen corn, thawed
    1 tsp Mrs. Dash Garlic & Herb
    1/4 tsp black pepper
    1/2 cup beef broth (reduced sodium)
    1 packet Betty Crocker Homestyle Creamy Butter mashed potatoes, prepared as directed on package
    1/2 cup reduced fat shredded cheddar cheese

Directions

Preheat oven to 350. Meanwhile, saute onion and ground chuck in large skillet until beef is browned. Drain off fat. Return pan to heat and stir in thawed vegetables, broth, and seasonings. Prepare mashed potatoes as directed on package, seasoning as desired.

Spritz a 1 1/2 qt casserole dish with cooking spray or olive oil, and pour beef mixture into casserole. Top with mashed potatoes and spread evenly. Sprinkle with cheese. Bake for 20 minutes or until cheese is melted and edges start to bubble.
