Cod and Shrimp Stew

Ingredients

    Garlic, 4 cloves
    Green onions, 4
    Olive Oil, 1 tbsp
    Hunts No Salt Added Diced tomatoes, 14.5 oz. can, 14.5 oz
    Pepper, black, .5 tsp
    Peppers, sweet, orange, fresh, 1 tbsp
    Peppers, sweet, red, fresh, 2 tbsp
    Zucchini, baby, 1 medium sliced and quartered
    Portabella Mushrooms, 100 grams, chopped
    Almonds, 0.33 cup, crushed
    Spinach, fresh, 2.5 cup
    Shrimp, cooked, 12 large
    Cod (fish), 16 oz
    Chicken Broth, Low sodium 2.5 cups

Directions

1)Heat olive olive and saute garlic and green onion.
2)Add tomatoes and pepper and bring to boil.
3)Finely chop red and orange peppers and add to stew.
4)Add zucchini, portabella mushrooms, almonds and broth and simmer.
5)Add spinach and wilt.
6)Add fish and cook till opaqe (about 4-5 minutes).

May serve with garlic wheat bread or brown rice.

Makes about 6 servings.
