Sweet Potato Biscuits

Number of Servings: 10

Ingredients

    2 cups whole wheat flour
    4 tbsp granulated sugar
    1 Tbsp Baking powder
    1 cup cooked mashed potatoes
    1/2 tsp salt ( I used kelp granules)
    3/4 cup milk
    4 Tbsp butter

Directions

Preheat ovewn to 450 degrees. Lightly grease cookies sheet. Sift together flour, b. powder, and salt. Cut in butter with your fingers. Stir in sugar and mashed sweet potato. Add milk gradually while kneading the mixture. If it is too wet to handle, add a bit more flour. Dip your hands into some flour first, roll out and pat the dough on a floured board to about 3/4 inch thick. Cut with a cookie cutter. Place on a cookie sheet and bake for 12-14 min or until golden. Serve with butter or jam. They are very good plain as well! Yeilds 10 biscuits. For smaller biscuits roll thinner and use smaller cookie cutters.
