Number of Servings: 24

Ingredients

3 cups grated zucchini (try not to grate your fingers!)
    1 cup sugar
    1 cup unsweeted applesauce (organic)
    1 tsp vanilla
    5 egg whites

    2 cups whole wheat flour
    2 tbsp of cinnamon
    1 tsp baking soda
    1 tsp salt
    1/2 tsp baking powder
    1/4 tsp ground nutmeg

Directions

Pre-Heat oven to 325F.

Grate the zucchini (careful of the fingers) and place in a large mixing bowl. Add sugar, applesauce, vanilla and egg whites. Stir together until they are well mixed.

Combine flour, cinnamon, baking soda, salt, baking powder and nutmeg in a bowl. Slowly mix in with zucchini mixture. It will be a very wet mixture.

Place muffin liners in the muffin tin and then spoon in the batter so the muffins are pretty even.

Bake for about 35-45 minutes. Enjoy!

Makes 24 muffins.

  • FABULOUS! I love any type of clean eating/health recipe. I subbed 1/2 cup sugar for stevia extract. Also, I replaced 5 egg whites for 2TBSP ground flax + 6 TBSP egg whites. I made 10 muffins and 1 loaf with the recipe, sprinkling the loaf with some walnut pieces and truvia. Regret - 1 not 2 batches! - 7/30/13

  • these are good. moist and easy to put together. I used 2 whole eggs instead of the egg whites, increasing the calorie count a bit. - 9/5/11
