Granpattie's Chicken Salad



Introduction

This makes a great sandwich, and it is also really good on top of a bed of greens with other veggies(cucumber, peppers, tomato, etc)

You might also add craisins or use them instead of the pineapple. I think both are good.

Number of Servings: 4

Ingredients

    1 12.5 oz. can white meat chicken, in water
    2 pineapple slices, chopped
    2 tbl. walnuts, chopped
    2/3 cup light mayonaise
    dash pepper
    dash poultry seasoning, if desired

Directions

combine all ingredients and mix well.


You can cut some calories by mixing lite or fat-free sour cream with the mayo, half each. (I didn't have any today)

This is also good with chopped onion and celery. (I was lazy today)

You may like less or more in your sandwich, I counted 4 servings. It's also really good on top of a bed of greens with other veggies(cucumber, peppers, tomato, etc)
