Vietnamese style tempeh with lemongrass and cilantro stir-fry

Number of Servings: 4

Ingredients

    *Gourmet Garden Lemon Grass herb paste 2 tsp or 2 inches fresh
    Olive Oil, 1 tbsp
    Tempeh, 227 grams
    Peppers, sweet, red, raw, sliced, 1 cup
    Soy sauce (tamari), 3 tbsp
    *Amoy White Rice Vinegar, 1 tbsp
    Brown Sugar, 3 tsp packed
    *Ground Fresh Chili Paste - Sambal Oelek Brand, 1 tsp
    Scallions, raw, 4 medium
    Cilantro, raw, 3 tbsp

Directions

Makes 4 servings. I like to sometimes add sliced Zucchini.
Chop lemongrass set aside (if using fresh)
Poach tempeh in water for 15 minutes.
Heat oil, add tempeh and stir fry till browned. Add pepper (and any other veggies if using) lemongrass and fry for 1 minute. Add tamari, vinegar, sugar, chili paste, scallions, trir to combine. taste and add extra chili if you like heat!
Spoon over hot jasmine/basmati rice, sprinkle with cilantro.
