cheesy egg bake

Ingredients

    6 eggs
    1/4c flour
    1t baking powder
    1/4t salt
    1/4t pepper
    1/2t italian seasoning
    1c milk
    1c low fat cottage cheese
    4oz low fat cream cheese cubed
    5oz lowfat cheddar cheese cubed

Directions

Preheat oven to 350. Spray a 9x9 inch baking pan with vegetable spray.
In a large bowl beat the eggs until frothy. Whisk in flour, baking powder, salt, pepper, italian seasoning, milk, and cottage cheese. Stir in cubed cheeses. Pour into pan. Bake for about 40 minutes until puffed, golden and set. Makes 8 servings.

  • The consistency was nice & fluffy, but the title "cheesy" is quite misleading (def add alot more cheese if you love it like this WI gal). I added broccoli, red & orange peppers to the recipe and cooked it for an additional 10 min on convection (over the regular baking time). Also bland. - 6/1/11

  • I just made this for breakfast & it was excellent. I'm not normally an egg eater, but this was great. It was cheesy and fluffy and had a light "crust" on the top. I will make this again. - 3/19/11
