Popeye Wrap

Ingredients

    4-5 Eggs, whisked
    1 1/2 pkg (10 oz) frozen Spinach; thawed
    2Tb. Butter
    1/2 C. Pine Nuts
    2 Cloves; crushed
    15 Basil Leaves
    1/4 tsp. Salt

Directions

Preheat oven 350.
Defrost Spinach. Squeeze excess moisture from spinach.
In skillet, on low heat; melt butter. Add pine nuts and garlic.
Toast until golden brown.
Put in food processor or blender; add basil until smooth.
Add spinach and salt and puse/blend for 10 seconds.
Stir in Eggs. Scrape into buttered pie pan.
Bake 20-30 minutes until set. Let Cool.
