Egg Free Quick Corn Bread

Number of Servings: 16

Ingredients

    1 c unbleached flour
    3/4 c cornmeal
    3 Tbsp sugar
    1.5 tsp baking powder
    1 c milk (I used 1% since it's what I had on hand)
    1/4 c canola oil (or a little less)
    3 Tbsp Sunsweet Lighter Bake Oil replacement (this stuff is AWESOME!!!)

Directions

Heat oven to 400. Line a square brownie pan with wax paper. In a large bowl, mix together flour, cornmeal, sugar, and baking powder. Whisk together milk, oil, and Lighter Bake until blended. Pour liquid mix into dry mix and whisk just until all ingredients are combined. Pour into lined brownie pan and bake in 400 degree oven for 20 minutes, or until toothpick inserted in center comes out clean. Try not to overbake it.

Makes 16 servings, about 2x2". Perfect next to a bowl of turkey chili!
