Basque Cabbage Soup

Submitted by: YAKYJAC

Introduction

This comes from a Basque restaurant in my home town. Its absolutely delicious and really filling. You can add in beans, hot sauce, or dip a sandwhich into this broth. It actually gives cabbage soup a good name! Plus it freezes great so don't worry about the large quantity. This comes from a Basque restaurant in my home town. • This was a great recipe, instead of thyme I added basil & cilantro. I added Salsa instead of tomato paste for a spicy flavor. Green beans were another little idea and it came out fantastic. I feel adding the green beans salsa and basil were KEY! - 8/4/11

  • I love basic cabbage soup. I would add some bulgar, Pearl barley or TVP for added texture and fiber. Some cumin, red pepper flake and maybe bay leaf to punch it up. - 11/16/10
