No Sugar Added Banana Mini Muffins

Number of Servings: 32

Ingredients

    2 c Spelt Flour
    1 tsp baking soda
    1/4 tsp salt
    1 egg
    1/2 cup coconut oil
    4 tbsp buttermilk lowfat
    1/2 tsp vanilla extract
    4 ripe bananas
    1 cup chocolate chips
    two squirts of liquid stevia

Directions

preheat oven to 325. grease and flour mini muffin pan. Blend flour, baking soda and salt and set aside. Mix egg, approx 10 drops of stevia and coconut oil. Add the flour mixture then the buttermilk, vanilla and mashed bananas. Fold in the chips. Use little cookie scooper, two scoops per muffin or fill each 2/3 full, bake for 25 minutes.
