All Bran Buttermilk Rusks

Ingredients

    1.5kg self raising flour
    350g all bran flakes
    2 cups sugar
    2 tsp salt
    500g margarine
    4 eggs
    500ml buttermilk

Directions

Preheat oven to 180 degrees C

1. Mix flour, all bran, sugar and salt in a large mixing bowl.
2. Melt margarine and add buttermilk whilst its still warm.
3. Immediately break the eggs into the buttermilk mixture and mix until the eggs are just mixed in.
4. Add buttermilk mixture to dry ingredients and mix well.
5. Put mixture in two square cake tins and press flat.
6. Bake for 35 mins. Cut into small even portions, when it comes out of oven and cooled down a bit.
7. Lay out portions on a baking sheet and dry out in a cool oven for 4 to 5 hours.
