Restuffed Baked Potatoes

Introduction

The lowfat version of twice baked potatoes. The lowfat version of twice baked potatoes.
Number of Servings: 8

Ingredients

    4 large baking potatoes
    8 oz block Kraft Sharp Cheddar Cheese, grated
    1/2 cup Daisy Light Sour Cream
    1/4 cup Smart Balance Spread
    1/2 cup chopped green onions
    3/4 cup diced Sam's Brown Sugar Spiral Sliced Ham

Directions

Bake potatoes in microwave. Scoop out insides of potatoes into a bowl leaving shell with 1/4 inch of potato on skin. Set skin aside.

Mash potato centers in bowl with sour cream and smart balance. Add chopped green onions, ham and grated cheese and mix well. Season with salt and pepper to taste.

Fill potato skins with all the filling. Bake in the oven at 350 degrees for 15 minutes (or microwave for about 5 minutes) or until heated through and cheese is melted.

Makes eight servings (potato halves).
